Is there a way to have individual notes respond to key pressure to raise pitch? The purpose is to create a pedal steel guitar voice for which I don't have to put different string bends on different channels.
I have done this with Roland sound modules, but I didn't see any way to add poly pressure, in other editors.

Polyphonic note pressure is supported in SoundFonts via modulators. You can add a modulator at either instrument or preset level with the modulator source as "Poly pressure" and the destination "Tuning (cents)". Set the amount in cents to how far you want the pitch to bend. Leave the curve as linear.

Just be aware that Polyphone's internal playback can't currently handle modulators, so you won't notice any effect until you load the SoundFont into a sampler that fully supports modulators, such as FluidSynth (2.0 or later required for poly aftertouch support). Sobanth VSTi and VSTSynthFont also have pretty good modulator support, but I don't know whether or not they work with polyphonic aftertouch.

The engine in Sobanth VSTi supports polyphonic aftertouch ever since it was first released, respectively since the beginning, when I started the development of the Sobanth engine. And Sobanth support even a lot more of rather unusual MIDI features and extensions, but what I have not documented publicly yet so far, because it's really not a few.

Version 2.1 (the beta being available) supports polyphonic aftertouch and pressure. The window containing the virtual keyboard has been improved and the sound engine reads now modulators.
